I have signature containing polish letters (ąłćż). Evolution changes them to '_'. Polish letters in message are accepted and send properly. Manual change of letters in signature (while editing message) helps. Problem occurs with every other file containing polish letters, that is imported via 
Ctrl+Alt+F (menu: Wstaw -> plik tekstowy; don't know english equivalent).
