The problem exists because evolution attaches text file using  UTF-8 encoding AND showing '_' instead of polish letters.
This ALSO changes encoding of whole message. BEWARE-> this can cause havoc! 
Temporary fix: don't use polish (probably french/deutsch) letters in your signature.
